Tomohon Women Become the Frontline of Sustainable Tourism: Hygiene, Sanitation, and International Breakfast Training by Poltekpar Bali
Tomohon, October 24, 2024 – In an effort to support sustainable tourism development in Tomohon City, Bali Tourism Polytechnic organized a training on Hygiene, Food Sanitation, and International Breakfast Service at the Amaris Hotel in Manado. The training, held on October 24, 2024, was attended predominantly by women, as a concrete step in supporting gender mainstreaming and women's empowerment in the tourism sector.
This training was part of the Culinary Arts Program (SKU) under the Community Service Program (PKM) of Bali Tourism Polytechnic, in collaboration with the Tourism Office of Tomohon City. With the theme "Human Resource Capacity Development for Supporting Sustainable Tourism Management," the participants were trained to understand the importance of maintaining hygiene and sanitation in food processing and service at their businesses, such as homestays and restaurants.
One of the highlights of this training was the practical session on serving American Breakfast and Continental Breakfast, which are international standards in the hospitality industry. This session, facilitated by faculty members from the Culinary Arts Program at Bali Tourism Polytechnic, taught participants how to serve breakfast dishes that include a variety of fruits, eggs, bread, cereals, and meats, all prepared in accordance with the standards of star-rated hotels. The training aimed to improve the quality of services at accommodation and culinary businesses in Tomohon, making them better prepared to welcome both domestic and international tourists.
Participants were also introduced to basic food hygiene and sanitation theory and practices. They learned how to maintain personal cleanliness as food handlers, ensure the cleanliness of kitchen areas and cooking equipment, and how to safely store and handle food ingredients. Furthermore, the hands-on session on serving international breakfast provided participants with new insights into international standards that could be applied at their businesses.
The participants displayed great enthusiasm throughout the session, particularly in learning the international standards for serving American and Continental breakfasts. They were highly engaged and actively participated in the practical exercises of preparing international breakfast dishes, which are standard in star-rated hotels. They were trained to serve various types of food such as fruits, eggs, bread, cereals, and meats using professional presentation techniques.
The training was attended by 100 participants, the majority of whom were women, marking a strategic step in empowering the women of Tomohon to support sustainable tourism. The Head of the Tomohon City Tourism Office, Mr. Judisthira A.K. Siwu, emphasized the importance of improving human resource quality to support the progress of the sustainable tourism sector in Tomohon. “With the right skills and knowledge, tourism industry players, especially women, will be able to provide the best service and attract more tourists to Tomohon City,” he said.
With the skills gained during the training, these women participants are expected to play a larger role in the hospitality industry in Tomohon. The active participation of women in this program reflects Bali Tourism Polytechnic’s commitment to supporting gender mainstreaming in the tourism sector.
“We are very proud that the majority of the participants in this training are women. This shows how the role of women in the tourism sector is increasingly recognized and supported. We hope that through this training, participants can apply the skills they have learned to support the growth of sustainable tourism in Tomohon,” said Mr. I Made Rumadana, Head of the Hospitality Department at Bali Tourism Polytechnic, who attended on behalf of the Director of Poltekpar Bali.
