Bali Tourism Polytechnic Increases the Capacity of Angseri Village Community through Bamboo Shoot and Torch Ginger Processing
Tabanan (Atnews) — Bali Tourism Polytechnic (Poltekpar Bali), through its Culinary Arts Study Program, held a Community Service (PkM) activity in Angseri Village, Tabanan Regency, focusing on the development of local culinary products based on torch ginger (kecombrang) and bamboo shoots (rebung) as competitive flagship culinary products. The two-day event, held from April 10–11, 2025, was attended by 30 residents consisting of farmers, MSME players, and housewives.
The event was officially opened by the Coordinator of the Culinary Arts Study Program, I Made Purwa Dana Atmaja, S.ST.Par., M.Pd., who also signed a Memorandum of Agreement (MoA) with the Angseri Village Government as a form of long-term collaboration commitment for the development of the village’s culinary potential.
Over the two days, participants received training on hygiene and sanitation, as well as basic knowledge of food ingredients on the first day. The second day was filled with hands-on practice in creating five innovative products made from torch ginger and bamboo shoots: Rempeyek Kecombrang (torch ginger crackers), Sambal Bongkot Teri (torch ginger and anchovy chili sauce), Sambal Kecombrang Teri (a variant of the same), Asinan Rebung (pickled bamboo shoots), and Kerupuk Rebung (bamboo shoot crackers). All products were designed with packaging and labeling and were handed over to the village as prototype souvenirs representing Angseri.
The event also introduced the application of green culinary skills, which included efficient use of ingredients, food waste management, and a sustainable approach to processing local foods.
Angseri Village Head, I Nyoman Warnata, S.Sos., expressed strong appreciation for the event. He stated that such training is an important first step in creating a competitive culinary icon for the village with economic value.
The activity was concluded by the Head of the Hospitality Department, I Made Rumadana, SE, M.Par., who also signed the Appropriate Technology Handover Pact with Angseri Village as a symbol of ongoing cooperation.
Based on satisfaction survey results, 95.7% of participants expressed high satisfaction with the event and recommended similar training in the future with a focus on eco-friendly packaging.
Through this program, Poltekpar Bali reaffirms its commitment as a vocational education institution that not only produces graduates but also actively assists communities in developing locally-based innovations.
The Culinary Arts Study Program, along with Poltekpar Bali, remains committed to promoting food self-sufficiency in villages, sustainable culinary innovation, and improving community quality of life through an educational, practical, and inclusive approach.
